Jennifer Morris and Dr. Bob Pool, a Cornell viticultural researcher, founded Billsboro in 1999 — the first bonded winery in Geneva, New York. They planted close to the northern end of Seneca Lake, where the city meets the water, and began making dry, European-style wines at a time when many Finger Lakes producers were still focused on sweeter styles.

Kim and Vinny Aliperti took over in 2019. Vinny had been head winemaker at Atwater Estate Vineyards for sixteen years before coming to Billsboro, so the transition wasn't a departure — it was a deepening. The focus remained on small production and dry varietals: Riesling, Gewürztraminer, Cabernet Franc, and Chardonnay sourced from some of the best vineyards on the lake.

The tasting room is in the heart of Geneva, walkable from the downtown, which makes Billsboro a different kind of stop on the Seneca Lake trail — city wine bar energy, not barn and gravel parking lot. The pours are precise and the staff knows what they're talking about.
