John and Josephine Ingle planted their first vineyard on Canandaigua Lake in 1972, before much of New York had decided vinifera could actually work here. They moved their winery operation to Keuka Lake and established Heron Hill in 1977, on a bluff adjacent to Dr. Konstantin Frank and McGregor Vineyard — three wineries within a mile of each other, all from the same era, all making the same argument.

The Ingle Vineyard — the original planting on Canandaigua — is still in production and still the source of some of Heron Hill's most distinctive bottles. Cabernet Franc from those old vines has won major recognition. The winery's sustainable farming practices were established early and have become a defining characteristic.

The tasting room on Keuka Lake has an elevated deck and views that tend to stop people mid-sentence. Heron Hill also has a tasting room on Canandaigua Lake, which makes the winery accessible to visitors doing the western lakes. Fifty years of making wine in the same place, from the same family's vineyards, means the wines have memory in them.
