Paul Hobbs grew up on a family farm in western New York. He went on to become one of the most celebrated winemakers in California, known particularly for his work in Napa and with South American producers. In 2013, he returned to New York — not to retire, but to grow Riesling on a 78-acre hillside above Seneca Lake.

He named the estate Hillick & Hobbs after his parents, Joan Hillick and Edward Hobbs, who had met at Cornell University, not far from where the vineyard sits. The vines are planted at high density on steep slate slopes, which is unusual in the Finger Lakes and intentional — the approach mimics the great Riesling slopes of Alsace and Mosel.

The winemaking is uncompromising. Dry Riesling made to age, from a site chosen by someone who has worked in the world's great wine regions and knows what a great site feels like. The tasting room is open seasonally and appointments are recommended. Hillick & Hobbs is for wine drinkers who are ready to be surprised by what New York can do.
